Ingredients
Small green Brinjals 8-10
Coriander 50 gm
Crushed Green peas and Pigeon Pea green 50 gm
Finely chopped green Garlic 50 gm
Crushed Peanut – 50 gm
Crushed green Chillies – 2-3 tea spoon
Salt to taste
Garam Masala – 1/2 tea spoon
Coriander Powder 2-3 Table spoon
Turmeric powder 1/2 table spoon
Sugar 2-3 tea spoon
Ginger paste 1/2 tea spoon
Oil 8-10 table spoon
Sesame Seeds 8-10 tea spoon
Mustard Seeds 1/4 tea spoon
Asafoetida 1/4 tea spoon
Water as needed

Method

For stuffing take all the ingredients in a bowl except Mustard seeds,Asafoetida and half of the oil. Fill the stuffing in Green Brinjals. Heat oil in a pan and add mustard seeds. After Mustard seed crackles, add in asafoetida. Later add stuffed Brinjals and left over stuffing. Mix well. Let it cook for 20-25 minutes on a slow flame. Add some water if needed. When done after preferred time serve it hot in a bowl garnished with Coriander. You can enjoy this with Roti or Puri.
